Located on the fertile Yangtze delta, food has always been abundant in Yangzhou. In keeping with regional flavor, most dishes are lightly flavored, tending towards sweet and emphasizes the use of fresh ingredients cooked in its own juices. Nationwide, the most famous local specialty is Yangzhou fried rice, which can be sampled at any number of restaurants or street side stalls. Feicui shaobao is a delicious steamed dumpling toppedwith ham with a vegetable filling. A goodsnack for those on the go is sanding baozi, buns filled with chicken, pork andbamboo shoots. A personal favorite of theSui emperor was, made of pork and supplemented withclams, mushrooms, crab meat or goosemeat; this creation will give you a taste ofimperial delight. Finally, for those with asweet-tooth, the sweet 64 layered qianceng yougao is a heavy treat. |
